Pumpkin pie is a sweet dessert pie with a spiced, pumpkin-based filling. The pumpkin is a symbol of harvest time. In the United States and Canada, Pumpkin Pie is usually prepared for Thanksgiving and Christmas.
500 gms. red pumpkin – skinned, seeds removed and cut into very thin small pieces
How to Make Pumpkin Pie
To make the pumpkin pulp: Boil the pumpkin in 3 tbsp. water. Cool and blend into a puree
Beat the eggs. Blend together the curd, butter, eggs and the pumpkin pulp together in a mixer
Blend well so that the mixer is fluffy and smooth
Sift together the maida and salt and place in a mixing bowl
Slowly mix wet batter and dry batter and blend well to obtain a smooth batter
Oil a baking dish and pour this pumpkin cake batter into a baking mould. Bake in a preheated oven at 160 degrees C for about 30 minutes or till a knitting needle when inserted in the centre comes out clean
Cut into strips and serve
