Ingredients

  • 3 -potatoes boiled, peeled and cubed
  • 1.5 cup- methi leaves
  • 1 -tomato or 1/2 cup - tomato puree
  • 1 tsp - garlic peeled and chopped finely
  • 1 tsp - ginger peeled and chopped
  • 1 tsp - cumin seeds
  • 1 tsp - mustard
  • 2-3 - green chillies
  • 1 tsp -red chilli powder
  • 1.5 tsp - coriander powder
  • 1 tsp - garam masala
  • 1 tbsp - jaggery or brown sugar
  • 1 tbsp - sour cream
  • 1 tbsp - cooking oil

How to Make Quick Aloo Methi

  • Heat oil in a pan and add mustard and cumin seeds, let it sputter.
  • Add green chillies, ginger and garlic and saute until the garlic turns light brown.
  • Add the potatoes and let it cook well (5 minutes approximately).
  • Add the tomato puree with the potatoes and cook for another 2 minutes.
  • Then add some water and the methi leaves.
  • Stir in all the masalas along with the jaggery.
  • Let the methi cook for a few minutes.
  • Finally, add sour cream just a couple of minutes before removing from the heat.
