Ingredients

  • 3 - beetroots
  • 2 - potatoes
  • 4 tbsp - roasted peanut powder
  • 2 - green chillies, chopped
  • Oil, mustard, asafoetida (hing), turmeric, cumin (all in small quantity)
  • Salt to taste
  • Chopped fresh cilantro (coriander) and grated coconut to garnish

How to Make Quick Beetroot Salad

  • Peel and chop beetroot and potatoes into cubes and cook them in pressure cooker for two whistles.
  • Drain remaining water after cooking then add salt to taste, and peanut powder.
  • Heat oil in a small pan, add mustard, asafoetida, turmeric, cumin and chopped green chillies.
  • Mix all well and garnish with fresh chopped coriander and grated coconut.
  • Enjoy it with chapattis (pita bread ), tortillas, rice or just by itself.
