  • 4 long- Eggplants
  • 1.5 " - Ginger
  • 2-3 flakes - Garlic
  • 1/2 tsp- Turmeric powder
  • 1 tsp- Coriander powder
  • 1 tsp- Mustard seeds
  • 1.5 tsp- Amchur
  • 2-3 tsp - Olive oil
  • Salt and chilli powder - to taste

How to Make Quick Eggplant Dish

  • Cut each eggplant length- wise into 3" long pieces.
  • Heat the olive oil and splutter the mustard seeds. Now add the grated ginger and finely chopped garlic.
  • Saute for 2-3 minutes until brown. Add the coriander and turmeric powder.
  • Then add the eggplant, salt and chilli powder. Mix and cover the eggplant with the masala.
  • Cover and cook until the eggplant softens. Add more oil in case it dries up.
  • Now add the amchur powder and mix well. To keep it crunchy, remove the lid and let it dry up.
  • Garnish with chopped cilantro.
  • Serve hot.
