Ingredients

  • Finely cut spinach - 1 big bowl
  • Finely cut onion - 2 tbsps
  • Finely cut green chillies - 2 tsps
  • Urad dal - 1 tsp
  • safoetida - 1 pinch
  • Oil or ghee (clarified butter) - 1 tbsp
  • Indian style yogurt - 2 cups
  • Finely cut coriander - 4 tsps
  • salt to taste

How to Make Quick Spinach Raita

  • Heat oil in a kadai. Add mustard seeds.
  • When it splutters, add urad dal and wait till it turns pink.
  • Add asafoetida and then onions and chillies. Fry for 3 mins and add cut spinach and fry for 5 mins.
  • Add one cup of water and cook till the water is fully absorbed.
  • Add salt. Add the mixture to the bowl of yogurt.
  • Garnish with coriander and serve with chapattis or rice.
