  • 2 bunches - spring onions greens with bulbs
  • 1/2 tsp - red chilli powder
  • 1/2 tsp - coriander seed (dhania) powder
  • 1/4 tsp - turmeric powder
  • 1/4 tsp - dried mango (turmeric) powder
  • 1/2 tsp - each cumin and mustard seeds
  • 2 to 3 pinches - asafoetida powder
  • 1 tbsp - oil
  • Salt to taste

How to Make Quick Spring Onion Stir Fry

  • Chop spring onion greens, with onions. Sprinkle all dry masalas over them, mix with hand.
  • Keep aside, till required.
  • Heat oil in a pan, when warmed, add seeds, asafoetida.
  • Allow to splutter, add spring onions.
  • Cover, allow to steam in for a minute.
  • Remove lid, mix well, allow to simmer over reduced heat.
  • Cook till all moisture evaporates and oil starts to separate.
  • Take off fire. Serve piping hot with phulkas, puris or steamed rice.
