Ingredients

  • A few lettuce leaves
  • 1/2 cup - cooked quinoa
  • 2 - carrots (grated)
  • 1 - cucumber (sliced as cubes)
  • a few cherry tomatoes
  • 2 tbsp - fried onions
  • a few red onions (chopped)
  • 1/2 tsp - pepper powder
  • salt - to taste
  • olive oil - as needed

How to Make Quinoa and Mixed Veggies Salad

  • Take the lettuce leaves, cooked quinoa, grated carrot, cucumber cubes, chopped tomatoes or cherry tomatoes, fried onions and chopped red onions in a large bowl.
  • Make a dressing with enough olive oil, salt and pepper powder and toss the vegetables gently until they get well mixed.
  • Serve immediately.
