  • 2 cups - ragi flour
  • 2 cups - maida ( all purpose flour )
  • 2 tbsp - mustard seeds
  • 2 tsp - hing powder
  • 6 to 7 - curry leaves
  • 1/2 inch - ginger, cut into small pieces
  • 4 tbsp - oil
  • 2 tbsp - grated coconut
  • cilantro (optional )
  • sugar to taste
  • salt to taste
  • water

How to Make Ragi and Maida Dosa

  • In a pan, heat a little oil and add the mustard seeds.
  • After they have spluttered, add hing powder and the curry leaves and keep it aside.
  • In another bowl, add the ragi flour and maida flour.
  • Add water to make a very thin batter.
  • Add the seasoned ingredients, salt, sugar, cut ginger pieces, coconut and cilantro.
  • Take a non-stick pan, and after it's heated, add the batter.
  • Add oil to the edges of the dosa. Flip and cook the other side for a few minutes.
  • Serve hot with pickle or chutney.
