Ingredients

  • 1 cup - Ragi flour
  • 3/4 cup - Jaggery
  • 2 - Eggs
  • 5 tbsp - Oil
  • 1/4 cup - Dates
  • 1/4 cup - Cashewnut cut into small pieces
  • 1 tsp - Baking powder
  • 1/2 tsp - Baking soda
  • 2- Ripe bananas

How to Make Ragi Banana Cake

  • Make jaggery syrup with 1/4 cup water. Allow it to cool.
  • De-seed the dates and soak the dates in jaggery syrup overnight or for 6 hours.
  • Beat eggs, oil, banana and jaggery with dates.
  • Sieve the Ragi with baking powder and baking soda.
  • Dust the nuts with little flour.
  • Mix dry and wet ingredients.
  • Pre-heat the oven at 180 degrees centigrade.
  • Bake the cake at 180 degree C for 30 to 40 mins. If think cake is very dry, soak with orange juice.
