  • 5 to 6 slices of sponge cake
  • ½ pint jelly
  • 1 pint milk (hot)
  • Few drops of raspberry essence
  • 2 tbsp. sugar
  • A few drops of green colouring
  • 2 tbsp. whipped cream

How to Make Rainbow Surprise

  • Line the sides and bottom of a square mould with sponge cake slices. Make the jelly and pour it over the sponge.
  • Add the sugar to the milk, add gelatin and allow the gelatin to dissolve.
  • Divide into three portions, adding raspberry essence to one, vanilla to another and the green colouring to the third.
  • Pour the first portion into the mold and allow to set. Repeat with the other two portions.
  • When quite firm, turn out, cut in slices and serve with chilled whipped cream.
