Ingredients

  • 500 g - rava
  • 500 g - sugar
  • 250 g - ghee
  • 25 g - each of blanched and sliced almonds and pistachios
  • 25 g - chopped cashewnuts
  • 1 tsp - cardamom powder
  • a few drops essence of saffron
  • a few drops each of orange, red and green food colouring
  • silver foil

How to Make Rava Barfi

  • Put 2 cups water in sugar and prepare a syrup of one-third consistency.
  • Remove from fire and keep it warm.
  • Heat ghee and fry the rava to a nice cream colour, put in the nuts, syrup and cardamom and keep on stirring till the mixture turns thick and leaves the sides of the vessel.
  • Remove from fire and stir in essence.
  • Divide the mixture into 3 equal portions.
  • Colour one a nice orange red, the other green and leave the third portion white.
  • Now take a greased thali and put in it orange mixture, level the surface and over it pour white and over this put the green.
  • Level the surface and cover with foil.
  • Set aside to turn cold, then cut into any shape you like.
