Ingredients

  • green or white ribbon pasta - 250 gm
  • capsicum 1 big
  • spring onions - 8 to 10
  • cucumber - 1 medium size
  • oil - 3 tbsp
  • garlic 3 cloves
  • tomato puree - 1/2 cup
  • soya sauce - 1 tbsp
  • curry powder - 2 tbsp
  • sugar - 1/2 tsp
  • salt to taste

How to Make Ribbon Pasta with Curry Sauce

  • Cook pasta in plenty of boiling water to which 1 tsp salt and 1 tsp oil is added.
  • Drain, rinse with cold water and keep aside.
  • Cut the capsicum into two parts.
  • Remove the seeds and cut into thin strips.
  • Peel and cut the cucumber into math stick like strips.
  • Chop the spring onions and mince the garlic.
  • Heat the oil and fry garlic till light brown.
  • Saute the capsicum and cucumber.
  • Add the spring onions and curry powder.
  • Fry for 1 minute.
  • Add the tomato puree, soya sauce, salt and sugar.
  • Bring to a boil, add noodles.
  • Lower the flame and cook covered till the noodles are heated through.
  • Serve immediately.
