Ingredients

  • 500 g - paneer
  • 2 kg - sugar
  • 1 1/2 litres - milk
  • 1.5 kg - sugar
  • 50 g each of blanched and sliced almonds and pistachios
  • a few drops - either essence of rose or saffron
  • 1 tsp - cardamom powder
  • silver foil

How to Make Rus Malai

  • Knead the paneer into a smooth mixture and form into small round and flat cakes.
  • Prepare a thin syrup from sugar and 1 litre of water.
  • Remove from fire when done and cover and set aside for the whole night.
  • Next morning, place the milk and remaining sugar on a slow fire and cook till the milk is reduced to three-fourths of the original quantity.
  • Remove from fire, cool and beat to a smooth mixture.
  • Drain out the syrup from the balls of the syrup, cover with foil and put into the milk.
  • Sprinkle essence, nuts and cardamoms on top. Serve after 1 hour. This sweet also lasts for a few days.
