Ingredients

  • 1 cup - mixed vegetables (include broccoli, asparagus, celery)
  • 1 - large red onion (finely chopped)
  • 1/2 bunch - cilantro
  • 3 - tomatoes or 1/4 cup tomato puree
  • For masala powder:
  • 2 tsp coconut
  • 1 tsp- poppy seeds
  • 2 - 3 - garlic cloves
  • 1 inch - ginger
  • 5 - red chillies
  • 1/2 inch - cinnamon stick
  • 4 - peppercorns
  • 1/5 tsp - dhania seeds
  • 4 - cloves
  • A little mace and nutmeg

How to Make Sabzi Masaledar

  • Dry roast ingredients for the masala and powder.
  • Cook the vegetables.
  • Heat oil and temper with jeera and slit green chillies.
  • Add onion and fry till brown.
  • Add masala powder. Fry for 30 seconds.
  • Add tomatoes or the puree.
  • Add salt and cook till oil floats to the top (about 10 - 15 minutes).
  • Add cooked vegetables and simmer for 10 minutes.
  • To make the gravy creamy, add 1/2 cup of milk.
  • Garnish with cilantro leaves and serve piping hot with phulkas, puris or rice.
