Ingredients

  • 250 g - potatoes, finely cut
  • 100 g - beans/peas, finely cut
  • 100 g - cauliflower, divided into florets
  • 100 g - paneer cut in cubes
  • 1/2 cup - grated coconut
  • 3 - tomatoes
  • 2 - carrots, finely chopped
  • 4 cloves - garlic
  • 2 - cardamoms
  • 3 tbsp - oil
  • 1 tsp - coriander seeds
  • 1 tsp - cumin seeds
  • 1 tsp - Kasuri methi
  • 1 tsp - garam masala
  • 1 tsp - chilli powder
  • 1 cup - water
  • 2 tsp - whipped curd
  • chopped coriander leaves for garnishing
  • ginger
  • salt

How to Make Sabzi Milan

  • Take 1 tbsp oil in a pan, heat the oil in a low flame. Cut the tomatoes and put it in the pan. Cook for 3 minutes.
  • Then add the garlic, ginger, cardamoms, chilli powder, coriander seeds, cumin seeds, Kasuri methi, and coconut. Cook these for 5 minutes.
  • Then grind these in a food processor by adding 1/2 cup of water.
  • Take the remaining oil in the pan, heat it in a low flame, add the garam masala and cook for a minute.
  • Add the ground paste and cook for 2 minutes.
  • Add the carrots, potatoes, beans, cauliflower and salt.
  • Add 1/2 cup of water and cook in low flame for 10 minutes.
  • Once the vegetables are cooked, add the paneer and cook for 2 minutes.
  • Finally add the curd and the coriander and serve hot.
