Ingredients

  • 1 tbsp. shrimp paste
  • 4 fresh red chillies, seeded (reserve the seeds)
  • 2 kaffir lime leaves, spines removed and chopped
  • ½ tsp. sugar
  • ¼ tsp. salt
  • Juice of 1 lime
  • Lime wedges, to serve

How to Make Sambal Belacan

  • In a small heavy pan, dry roast the shrimp paste until it is aromatic and crumbly.
  • Using a mortar and pestle or food processor, grind the roasted shrimp paste with the chillies to form a paste.
  • Grind in half the chilli seeds and the lime leaves.
  • Add the sugar and salt, and stir in the rest of the chilli seeds.
  • Moisten with the lime juice.
  • Spoon the sambal into little dishes and serve with wedges of lime to squeeze over it.
