Ingredients

  • 1 cup - maida
  • 1 tsp - baking powder
  • 1 tsp - salt
  • 2 tsp - sugar
  • 1/2 tsp - turmeric powder
  • 1/2 cup - oil
  • 1/2 cup - minced onion
  • 1/2 cup - finely chopped carrot, cooked
  • 1/2 cup - finely chopped beans, cooked
  • 2 - green chillies, chopped
  • 1 tsp - ginger, chopped
  • 1 tbsp - coriander leaves, chopped
  • 1 tbsp - mint leaves, chopped
  • 2 - eggs
  • 2 tsp - lime juice

How to Make Savoury Vegetable Cake

  • Lightly grease a 8 inch round microwave cake dish.
  • Mix maida with baking powder, salt, sugar and turmeric powder.
  • Combine 1/2 a cup of oil with onion in a shallow microwave proof dish and cook on full power for 3 minutes, stirring once half way through.
  • Mix in the carrot, beans, chillies, ginger, coriander and mint leaves.
  • Whisk the eggs with remaining oil and lime juice till frothy.
  • Mix in the maida and vegetable mixtures.
  • Pour in the prepared cake dish.
  • Cook on full power, without covering, for 4 to 5 minutes. Let it stand for 10-15 minutes, till it cools slightly.
  • Spread the top with some coriander/mint chutney. Decorate it with tomato slices and grated carrot.
  • Cut and serve straight from the dish.
