Ingredients

  • 2 cups - gheria
  • 3 - green chillies, finely chopped
  • 1 flake -garlic, grated
  • 2 tbsp - oil
  • 1 tbsp - sesame seeds
  • For Seasoning
  • 1 stalk - curry leaves
  • 1 tbsp - coriander leaves, finely chopped
  • 1/2 tsp - red chilli powder
  • 1/4 tsp - turmeric powder
  • 3 pinch - asafoetida
  • 1/2 tsp - Cuminutes and mustard seeds, mixed
  • 4 drops - lemon juice
  • salt to taste.
  • 1 tbsp - oil

How to Make Sev from Leftover Gheria

  • Heat leftover gheria in microwave or steam till soft.
  • Mix in chillies, garlic, sesame seeds, oil.
  • Put into a sev press with large chakli plate perforation.
  • Press on to a clean plastic sheet.
  • When done, place in direct sunlight, to dry.
  • When chewy and dried, soak in cold water for 15 minutes.
  • Heat oil in a pan and splutter cumin, mustard, asafoetida and curry leaves.
  • Add red chilli saute and add 2 cups water.
  • Add turmeric, lemon juice, salt if required and bring to a boil.
  • Add sev, coriander, cover with a lid, simmer till sev is soft.
  • The water will also become thicker and opaque.
  • Serve.
