Shrimp Fried Rice with Vegetables is a Thai style rice loaded with cauliflower, cabbage and straw mushrooms. It's a main meal that can be eaten on its own, and does not require any sides.

  • 250 g fresh shrimp
  • 2 cups cooked steamed rice
  • 1 cup cauliflower, sliced
  • 1 cup cabbage, sliced
  • 1 cup straw mushrooms
  • 2 tomatoes, sliced
  • 2 eggs
  • 1/2 onion, sliced
  • 1 tbsp ginger, sliced
  • 1 tbsp garlic, chopped
  • 3 tbsps cooking oil
  • 1 tbsp fish sauce or salt to taste
  • 1 tbsp light soy sauce
  • Sugar to taste
  • 1 tbsp long chilli, sliced and seeded
  • 2 tbsps spring onions, chopped
  • 2 tbsps fresh coriander

How to Make Shrimp Fried Rice with Vegetables

  • In a wok, fry garlic in oil. Add the eggs, shrimp, rice, onion, cauliflower, cabbage and mushrooms, while stirring continuously.
  • Add tomatoes, ginger, fish sauce, soy sauce, sugar, chilli, spring onions and coriander.
  • Saute well and heat through.
