Ingredients

  • 24 Jumbo Prawns
  • 400 gms. red chillies
  • 10 cloves garlic
  • 3 pickled garlic heads
  • 600 gms. sugar
  • 4 tbsp. salt
  • 600 ml. vinegar
  • 400 gms. cornflour
  • 2 eggs
  • 120 ml. corn oil
  • Pinch of white pepper
  • Freshly chopped coriander

How to Make Shrimps in Chilli Sauce

  • Blend together the chillies, fresh and pickled garlic. Pour the oil in a frying pan and add the blended ingredients and cook for 5 mins.
  • Then add the salt, sugar and vinegar and cook for a further 2 minutes.
  • In a flat bottomed bowl, beat the egg with a little salt and white pepper and mix with the peeled prawns, coat well.
  • Then coat the prawns with the cornflour and fry in shallow oil for 3 minutes, turning them occasionally.
  • Arrange the prawns on oval platter, re-heat the sauce and pour over the prawns, garnish with coriander and and serve at once.
