Shuktoni is a mixed vegetable Bengali preparation with a thick gravy.For this version of the Shuktoni, a variety of vegetables like brinjals, potatoes, peas, bittergourd, drumstick and raw banana are cooked in mustard paste. 

Milk is added at the end for a creamy, rich gravy.Shuktoni is best served with warm, white rice at the beginning of the meal. 

Pro-tip: For a good Shuktoni, ensure that all your cut vegetables, except drumsticks, are of equal size.

  • 2 brinjals
  • 2 medium potatoes
  • 100 gms peas
  • 2 bittergourds
  • 1 drumstick
  • 1 small raw banana
  • 1 inch piece ginger
  • ½ tsp. turmeric powder
  • 1 tsp. panch phoron
  • ½ tsp. sugar
  • 2 bay leaves
  • Salt and chilli powder to taste
  • ½ cup milk

How to Make Shuktoni

  • Peel and slice the vegetables into small pieces. Roast and powder panch phoron.
  • Grind ginger and 1 tsp. mustard to a paste. Fry brinjals, potatoes, bittergourds and bananas separately to a brown colour.
  • Drain and set each vegetable aside. Heat 2 tbsps. oil and fry the mustard paste nicely.
  • Put in turmeric, bay leaves, salt and chilli powder and fry briefly. Add all the vegetables.
  • Cook till the vegetables are soft. Put in milk and continue cooking till the gravy is thick. Serve hot.
