Ingredients

  • 1 cup - maida
  • 1/2 tsp - baking powder
  • 2 tsp - lemon rind
  • 1/2 tsp - vanilla essence
  • 1/2 cup - margarine or butter
  • 1/2 cup - powdered sugar
  • 2 eggs, separated
  • 1/2 cup - milk
  • 1 tbsp - lemon juice
  • For Topping:
  • 2 tsp - cinnamon powder
  • 2 tbsp - sugar

How to Make Simple Lemon Cake

  • Mix maida with baking powder.
  • Cream butter, sugar, egg yolks and rind and vanilla together.
  • Fold in maida with milk and lemon juice.
  • Beat the egg white stiffly and fold into the cake mixture.
  • Pour in a greased 8 1/2 inch round microwave proof cake dish.
  • Combine cinnamon and sugar for topping and sprinkle on top (Optional).
  • Microwave uncovered on full power for 4-6 minutes.
  • Allow to stand for 10 minutes.
  • Cut and serve from the dish.
