Ingredients

  • 250 g - bhindi / okra / lady's finger
  • 1 - onion, finely chopped
  • 2 - potatoes, cut in cubes
  • 1 tsp - garlic, crushed
  • 4 - green chillies, chopped
  • 1/2 tsp - turmeric powder
  • 1 tsp - dried mango powder
  • 1 - chopped tomato
  • 1/2 cup - yoghurt
  • 1 tsp - coriander powder
  • 1 tsp - garam masala
  • 1 tsp - cumin powder
  • 1/2 tsp - red chilli powder/ crushed whole dried red chilli
  • Salt to taste
  • 2 tbsp - vegetable oil

How to Make Sindhi Okra Potato Curry

  • In a pan heat a little oil and saute the garlic and onion.
  • Simmer until translucent.
  • Now add the chopped potatoes along with the tomato. Cook till a little tender.
  • Add okra and saute for 5-6 minutes.
  • Now add salt, spices and yoghurt. Mix well.
  • Cook for 5 minutes till all spices are mixed with okra and potatoes.
  • Remove from heat and serve hot with chapatti.
