Ingredients

  • 6 tomatoes
  • 1 onion
  • 1 ginger
  • 2 green chillies
  • 2 tsp - peas
  • 1 carrot
  • 2 potatoes
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1 tsp red chilly powder
  • 4 tsp of oil
  • 1 tsp - cumin seeds
  • pinch of hing
  • 1/4 tsp - turmeric
  • 1 tsp - coriander powder
  • Some coriander leaves, grated coconut - for garnish

How to Make Sizzling Stuffed Tomatoes

  • Slice off the tops of the tomatoes and scoop out the insides.
  • Mix together the chopped onion, grated ginger, chopped green chillies, grated carrot, peas and chopped potatoes.
  • Add to it lemon juice, salt and red chilly powder.
  • Fill this mixture in the tomatoes, keeping aside 2 tsps of the mixture.
  • In a pressure cooker, add oil, cumin seeds, and hing.
  • Add in the reserved mixture, turmeric and coriander powder.
  • Once this is lightly fried, add the tomatoes.
  • Cover and cook for 2 mins.
  • Remove from heat and keep aside for further 3-4 mins. Then serve the stuffed tomatoes, sprinkled with coriander leaves and grated coconut.
