Ingredients

  • 1 tbsp. olive oil
  • 2 shallots, diced
  • 3 garlic cloves, crushed
  • 1 large potato, peeled and diced
  • 1 ½ cups soya milk
  • 2 cups water
  • 4 ½ cups shredded kale
  • 250 gms. any white fish fillet, chopped
  • Salt and black pepper to taste

How to Make Smoked Fish and Kale Soup

  • Heat the oil in a saucepan.
  • Add the shallots and garlic and cook for 3-4 minutes, until softened.
  • Add the potato, milk, and measured water and season to taste.
  • Bring to a boil, then reduce the heat and simmer for 5-6 minutes.
  • Stir in the kale and cook for another 10-12 minutes, until the vegetables are tender.
  • Stir in the fish pieces and simmer for 2 minutes or until cooked through.
  • Ladle the soup into bowls and serve immediately.
