Ingredients

  • Chicken - 750g (bite-sized pieces)
  • Dry red chillies - 4 or 5
  • Chilli powder (optional)
  • Turmeric powder - 1/2 tsp
  • Egg - 1
  • Corn Flour - 3 tsp
  • Ginger - 2 to 3 pieces
  • Garlic - 1 or 2 pieces
  • Peppercorns (coarsely ground) - 1 tsp
  • Salt - as required
  • Oil - as required

How to Make South Indian Chicken Fry

  • Roast the dry red chillies on a low flame.
  • Grind the roasted red chillies, ginger and garlic.
  • Add little water to make a paste.
  • Whisk together egg, corn flour, prepared red chilli paste, peppercorns, turmeric powder and salt.
  • Blend this mixture with the chicken pieces.
  • Mix well. Marinate for 20-30 mins.
  • Heat oil and drop the chicken pieces.
  • Deep-fry the pieces till they crisp up.
