Ingredients

  • Idli rice (boiled) - 5 cups
  • Whole urad dal - 1 cup
  • Fenugreek seeds - 2 tsp
  • salt to taste
  • For seasoning: Chopped green chillies - 1 tsp
  • Ginger 2 tsp
  • Curry leaves 1 tsp
  • Chopped cashewnuts 2 tsp
  • Grated coconut - 3 tsp
  • Soaked channa dal - 3 tsp
  • Hing powder - 2 tsp
  • Black pepper corn - 2 tsp

How to Make Special Idli

  • Soak rice overnight.
  • Soak the urad dal and fenugreek seeds in the morning for 3 hours.
  • Grind the soaked rice separately to a coarse consistency (like rava).
  • Grind the urad dal to a fine paste (fluffy and soft).
  • Mix the rice and dal paste, add salt and let the dough ferment for 5-6 hours.
  • Mix all the ingredients for seasoning in the dough.
  • Pour the dough in the idli mould and steam for 7 -8 mins.
  • Serve with any chutney.
