Ingredients

  • 1.5 cups - Rice
  • 3 cups - Water
  • 4 - Brinjals (round violet medium size)
  • 2 - Green Chillies (cut in length)
  • 1 - Onion (large finely chopped)
  • 1 tsp - Jeera
  • 1/2 tsp - Turmeric
  • 1/2 tsp - Garam Masala
  • 1/2 tsp - Red Chilly powder
  • Salt to taste
  • 1/2 cup - Oil

How to Make Special Vangibath

  • Cut brinjals into four pieces and put them in salt water.
  • Wash rice and soak.
  • Heat oil in a pressure pan.
  • Add jeera, onions and saute.
  • Now add brinjals, salt, turmeric powder, green chillies.
  • Fry till brinjals become a bit soft.
  • Add garam masala, chilly powder.
  • Add rice and fry for further 2 mins.
  • Add 3 cups of water and close lid.
  • After two whistles put off the flame.
  • Now serve it.
