Ingredients

  • 1 cup - rice
  • 1/2 cup - tur dal -
  • 2 - tomatoes, finely chopped
  • 1 - onion, medium finely chopped
  • 1/4 cup - carrot, diced
  • 1 - potato, small diced
  • 1/4 cup - green peas
  • 1/2 tsp - red chilli powder
  • 1/4 tsp - turmeric powder
  • 1/2 tsp - cumin seeds
  • 1 tbsp - oil
  • salt to taste
  • 2 tbsp - coriander, chopped

How to Make Special Vegetable Khichdi

  • Wash rice and dal, keep aside.
  • Heat oil in a pressure pan and add cumin seeds. When they are brown, add finely chopped onions and saute till transparent.
  • Add finely chopped tomatoes and fry till pulpy.
  • Add chopped carrot, potatoes and peas and fry some more.
  • Add chilli powder, turmeric powder and fry for 2 more minutes.
  • Add washed rice and dal and fry on low for 3 minutes.
  • Add 4 cups water, salt to taste and close pressure pan.
  • Bring to pressure on high heat and lower heat after one whistle. Cook on low for 8-10 minutes.
  • When pressure reduces, open pan, check seasoning, sprinkle coriander.
  • Serve hot with curd and pickle.
