  • 1.5 cups - ridge gourd diced big
  • 1.5 cups - cucumber diced big
  • 1 cup - beans diced medium lengthwise
  • 3/4 cup - potatoes diced medium
  • 3/4 cup - carrots diced small
  • 3 tsp - peanuts
  • 1 cup - tur dal
  • 1 tsp - tamarind paste
  • 1/2 tsp - jaggery (optional)
  • For masala:
  • 4- red chilli
  • 1 tsp-coriander seeds (dhania)
  • 1/4 tsp- black pepper
  • 1/2 tsp- urad dal
  • 4 tsp-grated coconut

How to Make Special Vegetable Kootu

  • Fry the masala ingredients, except coconut, till the raw smell goes.
  • Then grind it to a paste with coconut and pinch of salt.
  • Pressure cook all the vegetables including peanuts up to 3 whistles max or boil them in a closed pan with 2 tsp salt. Drain them and keep aside.
  • Pressure cook the tuvar dal as well. You can do this along with vegetables by keeping both in different vessels.
  • Heat 2 tbsp oil, add 1 tsp mustard seeds, pinch of turmeric and hing, add all vegetables and saute for 2 minutes.
  • Then add tamarind paste, jaggery with 1/2 cup water and let it boil.
  • Add the ground paste, then tuvar dal paste and let boil for 5 minutes.
  • Add required salt and water to desired consistency.
  • Serve hot with rice.
