  • 1 - large brinjal
  • 1 - onion, finely chopped
  • 1 - tomato, finely chopped
  • 1tsp - ginger-garlic paste
  • 1tsp - garam masala
  • 1tsp - chilli powder
  • 1tsp - ajwain powder
  • 1tsp - coriander powder
  • 3tsp - oil
  • 1tsp - jeera
  • 1tsp - lime juice
  • Salt to taste
  • Coriander leaves for garnish

How to Make Spicy Baingan Bharta

  • Grease the brinjal with oil.
  • Make 5-6 cuts on the surface with a knife.
  • Preheat the oven to 375 F and bake the brinjal until it is completely cooked and soft.
  • The brinjal can also be cooked on the stove in a covered vessel with some oil.
  • Remember to saute frequently.
  • Cool the brinjal once cooked.
  • After it cools, remove the skin and mash it into a pulp.
  • Heat the oil in a kadai and roast jeera and ginger-garlic paste till fragrant.
  • Add chopped onions and fry till they become transparent.
  • Add tomatoes and saute.
  • Add a little water and cook covered for about 2 mins.
  • Add the mashed brinjal to the mixture.
  • Add all the dry masalas and salt and cook till they blend well into the sabzi.
  • Remove from stove, add the lime juice and mix well.
  • Garnish with coriander leaves and serve hot with rotis.
