Ingredients

  • 500 g - finely minced lean mutton
  • 1 tbsp - ground coriander
  • 1 tsp - ground turmeric
  • 1.5 tsp - ground ginger
  • 1.5 tsp - ground chillies
  • 1.5 tsp - ground khus khus
  • 1 tsp - fine desiccated coconut
  • 1 pinch of ground cloves
  • 1 pinch of ground cinnamon
  • 1 pinch of ground cardamoms
  • 1 tbsp - besan or ordinary flour
  • salt to taste
  • 100 g - ghee
  • To saute:
  • 2 - small onions (finely minced)
  • 2 - cloves of garlic (finely minced)
  • a squeeze of lemon juice.

How to Make Spicy Shami Kababs

  • Make a mixture of all the ingredients.
  • In a stew pan, warm 50 g of ghee and fry lightly the small onions and 2 cloves of garlic, both finely minced.
  • Add to this the above mixture, stir well and cook slowly for 10 to 15 minutes.
  • Turn out, let it cool, and then either pound or grind it into a paste with a squeeze of lemon juice.
  • Form into oval cutlets and fry in the usual way, or press on the metal skewers and grill, basting well.
