Ingredients

  • 4 eggs
  • ¼ cup milk
  • 2 fresh green chillies, finely chopped
  • 2 tbsp. fresh coriander leaves, chopped
  • ¼ cup grated cheddar cheese
  • ¼ tsp. salt
  • ¼ tsp. ground black pepper
  • 4 slices bread
  • Corn oil for frying

How to Make Spicy Toasts

  • Break the eggs in a medium bowl and whisk together.
  • Slowly add the milk and whisk again.
  • Add the finely diced chillies, chopped fresh coriander leaves, cheddar cheese, salt and pepper and mix well.
  • Cut the bread slices in half diagonally and soak them one at a time in the egg mixture.
  • Heat the oil in a medium frying pan and fry the bread slices over a medium heat, turning them once or twice, until they are golden brown.
  • Drain off any excess oil as you remove the toasts from the pan, and serve immediately.
