Ingredients

  • 1 bunch - spinach leaves
  • 1 cup - gram flour
  • 1 tbsp - rice flour
  • 1 tbsp - plain flour
  • 1/2 tsp - cumin powder
  • 1/4 tsp - turmeric powder
  • 2 - green chillies
  • 1 - garlic flake
  • 1 - small piece of ginger
  • 1 tsp - hot oil
  • salt to taste
  • oil to deep fry

How to Make Spinach Fritters

  • Clean spinach, keeping whole leaves sans stem.
  • Wipe down any excess moisture, keep aside till required.
  • Crush ginger, garlic, chillies to a paste.
  • In a deep bowl, mix all flours.
  • Add salt, turmeric, ground paste, and a little water.
  • Mix into a smooth batter, adding more water if required.
  • Add in hot oil, mix.
  • Mixture should coat back of spoon evenly.
  • Heat oil to deep fry in a frying pan.
  • Dip one leaf in batter and drop into hot oil.
  • Repeat with rest of the leaves.
  • Fry on medium heat till light golden brown on both sides.
  • Drain on absorbent paper.
  • Serve hot with ketchup, tamarind chutney or green chutney.
