Spring Soup, as the name suggests, is a delicious and palate pleasing soup recipe made from multiple vegetables. The soup is named so as it is made from veggies available in spring season such as carrots, leek, spinach and radishes.

The soup recipe is extremely healthy and full of nutrition. The veggies are chopped finely and sautéed with some butter in a saucepan. A hint of spinach will add the zesty flavor to the entire recipe.

Now to make the soup thick, you can add some flour or leave it like that. Egg yolks with cream are finally added to complete the recipe. You can enjoy it with sandwiches or toasts.

  • 450 gms - Carrots
  • 2 - Leeks
  • 1 bunch - Raddish
  • 170 gms - Spinach
  • 2.5 tbsp - Refined flour
  • 60 gms - Butter
  • 1.5 litres - Water
  • 2 - Egg yolks
  • 6 tbsp - Cream
  • Salt and pepper to taste

How to Make Spring Soup

  • Wash carrots, leek, spinach and radishes.
  • Melt butter in a saucepan.  Add sliced leeks and carrots.
  • Season with salt and pepper and simmer for 5 minutes.
  • Add water and bring to a boil. Simmer for 10 minutes.
  • Add chopped spinach and sliced radishes.
    Mix flour in a little cold water and add while stirring.
  • Simmer until carrots are soft.
  • Remove from heat, stir in yolks mixed with cream.
  • Serve immediately with little cheese sandwiches, plain or toasted.
