Ingredients

  • 1 cup - rice, washed and soaked for 30 mins.
  • 1 cup - sprouted moong
  • 2 bay leaves
  • 2 green chillies, slit
  • 4 black pepper
  • 2 tbsp - oil
  • 3 cups - water
  • 1/4 tsp - turmeric powder
  • 5-6 curry leaves
  • 1/2 tsp - mustard seeds
  • salt to taste
  • Make a paste of:
  • 1 cup - coriander leaves
  • 1/2 tsp - garam masala
  • 1/2 cup - grated coconut
  • 2 green chillies
  • 1/2-inch ginger
  • 1/2 tsp - amchoor (dry mango) powder

How to Make Sprout Moong Pulao

  • Heat oil in a cooker.
  • Add mustard seeds and let them splutter. Add bay leaves, chillies, curry leaves and pepper.
  • Add sprouted moong and turmeric powder.
  • Simmer for 5 mins.
  • Add rice, salt and water.
  • Cook till rice is almost half done.
  • Add the paste and let it cook till rice is done.
  • Serve hot with any vegetable curry.
