Ingredients

  • Squash – 450 grams
  • Potato – 3 (about 450 grams)
  • Brown Onion – 2 nos (about 100 grams)
  • Green Chillies – 4 nos
  • Fenugreek Seeds – ¼ tsp
  • Nigella Seeds – ¼ tsp
  • Cumin Seeds – ¼ tsp
  • Mustard Seeds – ¼ tsp
  • Kashmiri Red Chilli Powder or Paprika – 1 tbsp
  • Turmeric Powder – ½ tsp
  • Curry Leaves – 2 sprigs
  • Oil – 2 tbsp
  • Salt to taste
  • Lemon Juice – as per taste.

How to Make Squash and potato stir-fry

  • Cut squash and potato into 1×1 inch size cubes. Finely slice the onions, and cut the green chillies lengthwise.
  • Heat oil in a non-stick pan.
  • Add fenugreek, nigella, cumin, mustard and saute for about 30 seconds.
  • Add curry leaves and onion, saute for another 2 minutes.
  • Now add squash, potato, green chillies, turmeric powder, chilli powder and salt. Stir and mix in all ingredients, cover and cook on medium flame for 15 mins.
  • Squeeze a generous amount of lime juice just before serving.
