Sri Lankan Curry is a palatable home-made curry from the Sri Lankan traditional cuisine. It is not too spicy and full of flavour making it a family-friendly recipe. The boiled eggs, garnished with onion slices, adds to the richness of the Sri Lankan Curry.

  • 700 gms. Lamb
  • 2 onions, chopped
  • 1-2 cloves garlic
  • 2 tbsp. oil
  • 2 tbsp. flour
  • 1 tbsp. madras curry powder
  • 75 gms. Freshly ground coconut
  • ¼ litre chicken stock
  • 1 cinnamon stick
  • 1 tsp. fenugreek powder
  • Salt and pepper
  • To garnish:
  • 2 hard boiled eggs, peeled and quartered
  • 1 onion cut into quarters and separated

How to Make Sri Lankan Curry

  • Heat the oil in a large pan, add the onions and garlic and cook to soften for 2-3 mins.
  • Add the cubes of meat and saute it till it turns brown, adding more oil if needed.
  • Sprinkle in the flour and curry powder,stir well and cook for 3 minutes.
  • Put the creamed coconut in a jug and make upto 72.5 mls with stock, pour this over the meat alongwith the grated coconut.
  • Add the spices and season well.
  • Simmer on top of the stove for 2 hours.
  • Remove the cinnamon stick and garnish with hard boiled eggs and onion slices.
