Ingredients

  • 10 - baby eggplants
  • 10 - green chillies (small size)
  • 1 bunch -coriander (medium)
  • salt
  • 3 - 4 tbsp - oil

How to Make Stuffed Baby Eggplant

  • Blend the coriander, green chillies and salt into a smooth paste.
  • Heat the oil in a kadai.
  • Cut the eggplant from top to the bottom, keeping the stem.
  • Stuff the paste into each eggplant and add them to the oil.
  • Fry them until the eggplants are done.
  • This tastes good with ghee, rice and rotis.
