Ingredients

  • 1 kg - brinjals (preferably round ones)
  • 2 - large onions
  • Dry red chillies 4 or 5 or (according to your taste)
  • 200 ml - oil
  • 2 tbsp - butter

How to Make Stuffed Baingan

  • Wash and wipe the brinjals. Make 6 or 8 slits in each one with the stem intact.
  • Chop and grind onions to a paste with some salt and the red chillies.
  • Stuff the brinjals with the paste.
  • Heat oil in a deep pan, add stuffed brinjals and close it with a lid.
  • After the brinjals become tender, add butter. Let the brinjals fry till oil come out.
  • Garnish with coriander leaves.
  • This dish tastes best with dal and hot rice.
