Ingredients

  • 8 medium sized mushrooms, wiped
  • 1 small onion, skinned and freshly chopped
  • 15 gms. butter
  • 5 level tbsp. fresh white breadcrumbs
  • 25 gms. cheese, grated
  • 1 tsp. chopped parsley
  • 1 beaten egg to bind
  • Salt and pepper
  • 2 tbsp. cooking oil
  • 4 round buttered toast

How to Make Stuffed Mushrooms on Toast

  • Remove and chop the stalks from the mushrooms. Lightly fry the stalks and the onion in the butter for 3-5 minutes, until soft.
  • Add the breadcrumbs, cheese and parsley and enough egg to bind them all together.
  • Stir until well mixed and hot, season to taste. Brush the mushrooms with a little oil and put in a greased baking tin.
  • Pile the remaining into the mushrooms, cover with greaseproof paper or foil and bake in the centre of the oven at 190 degrees C for about 20 minutes. Serve on buttered toast.
