Ingredients

  • 500 g - basmati rice, washed and drained
  • 500 g - chopped mutton
  • 5 - crushed cardamoms
  • 1 - bay leaf
  • 2 - small sticks of cinnamon
  • 1 cup - sliced onions
  • Salt to taste
  • 5 cups - water
  • 2 tbsps - oil
  • 1 tbsp - ghee
  • 10 - garlic cloves
  • 1 - piece of ginger
  • 3/4 cup - milk
  • A pinch of saffron

How to Make Sultanpuri Pulav

  • Pressure cook the mutton with 1 cup water, crushed cardamoms, bay leaf, cinnamon and 1/2 cup sliced onions with salt as per taste.
  • Once cooked, remove mutton from the stock and reserve the liquid.
  • Heat oil and ghee in a pan.
  • Add 1/2 cup sliced onions, garlic and ginger. Fry till golden brown.
  • Now add the pressure cooked mutton and fry till browned.
  • In the pressure cooker, spread a layer of basmati rice. Spoon the fried mutton on top.
  • Add second layer of rice.
  • Pour the reserved stock and remaining water.
  • Add milk with a pinch of saffron dissolved in it.
  • Pressure cook for 20 mins.
  • Let it cool. Serve hot with raitha.
