Ingredients

  • For Filling:
  • 1 cup - roasted gram
  • 1 cup - sugar
  • 1 tsp - cardamom powder
  • 1 tbsp - grated coconut
  • 1 tsp - ghee
  • Few - cashew nuts
  • For Poli:
  • 1 cup - maida
  • 1 pinch - salt
  • Oil - for frying

How to Make Suruttai Poli

  • Powder the roasted gram and sugar together.
  • Break the cashew into small pieces.
  • Heat the ghee, roast the broken cashew and coconut.
  • Fry for few minutes.
  • In a bowl, mix the fried cashew mixture, the powdered gram mixture and cardamom powder, and set aside.
  • Mix the maida and salt in a bowl.
  • Add water little by little and make a soft dough.
  • Keep aside for half an hour.
  • Makes small balls from the dough and roll them out into medium sized circles.
  • Spread them on paper and leave aside for few minutes.
  • Deep Fried them in hot oil.
  • Remove them when they are nearly cooked -- they should not puff up totally.
  • The fried pooris should be soft and not brown or crispy.
  • As soon as you remove them from oil, spread the filling over the fried poori and roll it tight.
  • These rolls will be soft when made, but turn crisp as they cool.
