1 cup - roasted gram
1 cup - sugar
1 tsp - cardamom powder
1 tbsp - grated coconut
1 tsp - ghee
Few - cashew nuts
1 cup - maida
1 pinch - salt
Oil - for frying
How to Make Suruttai Poli
Powder the roasted gram and sugar together.
Break the cashew into small pieces.
Heat the ghee, roast the broken cashew and coconut.
Fry for few minutes.
In a bowl, mix the fried cashew mixture, the powdered gram mixture and cardamom powder, and set aside.
Mix the maida and salt in a bowl.
Add water little by little and make a soft dough.
Keep aside for half an hour.
Makes small balls from the dough and roll them out into medium sized circles.
Spread them on paper and leave aside for few minutes.
Deep Fried them in hot oil.
Remove them when they are nearly cooked -- they should not puff up totally.
The fried pooris should be soft and not brown or crispy.
As soon as you remove them from oil, spread the filling over the fried poori and roll it tight.
These rolls will be soft when made, but turn crisp as they cool.
