Are you tired during this scorching summer? Get yourself refreshed with this super cool, summer salad - Swedish Chicken Salad. A wholesome salad with a mix of flavours - spicy and creamy. Add to it a healthy dose of apples, banana, lettuce and other such ingredients.  

This salad would be a favourite even with the non-vegetarians as it has tasty roasted chicken. Double cream and mayonnaise are whipped and added in order to attain a rich, thick consistency. The whole salad is piled on a layer of rice and garnished with lettuce leaves.

  • 500 gms. oven-ready chicken, roasted
  • 175 gms. long grain rice
  • 1 green eating apple
  • 1 red eating apple
  • 2 bananas
  • 1 tsp. lemon juice
  • 250 ml. double cream
  • 200 ml. mayonnaise
  • 1 tsp. curry powder
  • Salt and pepper to taste
  • Lettuce leaves for garnishing

How to Make Swedish Chicken Salad

  • Allow the chicken to cool. Meanwhile cook the rice in boiling, salted water for about 12 minutes, drain and cool.
  • Carve the chicken into slices and cut these into strips. Halve and core the apples and slice thinly.
  • Peel the bananas and slice thickly. Sprinkle both with lemon juice.
  • Whip the cream to the same consistency as the mayonnaise and fold it in. Add the curry powder.
  • Fold in the chicken, apple and banana. Add more lemon juice and adjust the seasoning.
  • Pile on a bed of rice, or combine with the rice. Garnish with lettuce leaves.
