Ingredients

  • 4 cups - bread flour/all - purpose flour
  • 1 cup - almond powder
  • 1/4 tsp - almond extract
  • 2 tbsp - active dry yeast
  • 1 cup - confectioners sugar
  • 2 tbsp - sugar
  • 1/2 tsp - salt
  • 1 - egg, whisked
  • 1/2 cup - butter, softened
  • 1 cup - lukewarm milk
  • Almond flakes
  • 1 - egg yolk + water (to glaze)
  • Water as required

How to Make Sweet Almond Buns

  • Add the active dry yeast, sugar and salt to the lukewarm milk.
  • Let this mixture sit for 5 minutes, until the yeast turns foamy.
  • Mix together the softened butter, confectioner's sugar, whisked egg, bread flour, almond powder, almond extract, the foamy yeast mixture and water if required.
  • Knead into a soft and smooth dough.
  • Place the dough in a greased bowl and keep in a warm place for an hour with lid closed, until the dough doubles in volume.
  • After an hour, knead the dough down and divide into 10-12 medium sized balls.
  • Shape them into buns.
  • Arrange them in a baking tray lined with baking paper.
  • Let them sit again for an hour or until they double in volume.
  • Preheat the oven to 350 F.
  • Meanwhile, brush the buns with egg yolk mixed with water.
  • Sprinkle the almond flakes over the buns and bake them on the middle rack of the oven for 25-30 minutes, until the crust turns golden brown.
