Tabouleh or Tabbouleh is a Middle Eastern vegetarian appetiser or salad traditionally made of tomatoes, finely chopped parsley, mint and bulgur. The salad is seasoned with olive oil, lemon juice and salt. Tabouleh is traditionally served as part of a mezze or appetiser in Arabian cuisine.

Ingredients

  • 1200 gms. parsley, chopped
  • 100 gms. onions, chopped
  • 250 gms. cracked wheat
  • 100 gms. tomatoes, chopped
  • 100 gms. mint leaves
  • 300 ml. lemon juice
  • 250 ml. olive oil
  • Salt and pepper

How to Make Tabouleh

  • Wash the cracked wheat well and soak it in cold water for ten minutes. Drain
  • Chop the tomatoes into small pieces
  • Mix all the ingredients together
  • Line a large plate with lettuce leaves and arrange tabouleh on the top
  • Keep chilled until ready to serve
