Ingredients

  • 1 - green bell pepper, cut into squares
  • 1 - yellow pepper, cut into squares
  • 8 - cherry tomatoes or 4 - medium tomatoes
  • 8 -cauliflower florets
  • 8 - fresh or canned pineapple chunks
  • 8 - cubes tofu
  • 1 cup - boiled rice, to serve (optional)
  • For the marinade
  • 1 tbsp- vegetable oil
  • 2 tbsp - lemon juice
  • 1 tsp - salt
  • 1 tsp - finely ground black pepper
  • 1 tbsp - clear honey
  • 2 tbsp - chilli sauce

How to Make Tangy Grilled Veggies

  • Thread the prepared vegetables, pineapple and tofu cubes on to four skewers, alternating the ingredients.
  • Prepare the marinade by mixing together all the ingredients. If the mixture is a little too thick, add 1 tbsp water to dilute it a little.
  • Brush the skewers with the seasoned oil and ready it for barbecuing.
  • Cook on a hot barbecue for 10 minutes, until the vegetables are done. Turn the vegetables often and brush the marinade every time.
  • Can be served on a bed of plain rice.
