Ingredients

  • 1 cup - urad dal
  • 1 cup - coconut, grated
  • 1.5 tsp - coriander seeds (dhania)
  • 1/2 tsp - fenugreek
  • 6 to 8 - red chillies
  • 1/2 lime size - tamarind
  • 1.5 tsp - jaggery (brown sugar)
  • 2 tsp - cooking oil for deep frying
  • salt as required

How to Make Tasty Bajji Ambade

  • Soak urad dal for 4-6 hours and grind very fine in a wet grinder without adding any water but adding about a tsp of salt.
  • Make a thick coarse paste.
  • Make small vadas with a wet hand and deep fry in oil on a low flame till light brown.
  • Keep these aside.
  • Masala juice to soak vadas:
  • In a kadai heat 2 tsp of cooking oil and fry 1.5 tsp of dhania, 1/2 tsp of fenugreek and 6 dry chillies.
  • Once it is done turn off the stove and add one cup of grated coconut and grind all this mixture into a fine paste.
  • In a kadai heat tamarind juice (dissolve tamarind in one cup of water).
  • Add salt as needed and when the raw smell disappears, add the coconut paste, jaggery and one more cup of water.
  • Bring it to boil and keep it aside.
  • Soak the vadas in the above masala juice for about 30 minutes.
  • Serve warm.
