Ingredients

  • 2 - small carrot, cut length wise thinly
  • 10 - green beans, cut length wise
  • 1/4 cup - peas, frozen or soaked over night
  • 1/4 cup - cauliflower florets
  • 1/2 - bell pepper, cut length wise thinly
  • 1 - medium onion, cut into half and thinly sliced
  • 4 - small cinnamon sticks
  • 4 - cloves
  • Basmati Rice - 1 cup
  • Oil - 2 tbsp
  • Ghee- 2 tbsp
  • For Green Masala :
  • 4 to 5 - green chillies
  • 1/4th inch - ginger piece
  • 2 - garlic cloves
  • 1 cup - chopped cilantro

How to Make Tasty Vegetable Fried Rice

  • Wet grind the green masala ingredients with little water in a blender and keep aside.
  • Cook 1 cup of basmati rice with 2 cups of water in a cooker and set aside to cool.
  • In a heavy bottom pan, mix 2 tbsp of ghee, 2 tbsp of oil. On medium flame, fry onion, cinnamon sticks, and cloves till onion becomes transparent.
  • Then put rest of the cut vegetables to the same pan and fry till all the vegetables are done for almost 20 mins or when you feel it is done.
  • Now put the green masala mix which was grinded to this along with salt and lemon juice to your taste. Fry for about 3-4 mins.
  • Now take the rice which was set to cool, mix it to the vegetable mixture and turn the heat to low.
  • Mix nicely and leave it on stove for 5-10 mins.
  • Serve it with any side dish like raitha or chenna.
