  • 1 cup thick fresh cream
  • 1 onion, finely chopped
  • 1 capsicum, finely chopped
  • 1 tiny sprig spring onion, finely chopped
  • 2 tbsp salad or refined oil
  • 2 tsp lemon juice
  • 2 tsp mustard powder
  • 2 tsp sugar, ground
  • 8-10 olives, finely chopped (optional)
  • 2 tbsp tomato sauce
  • 2 tsp green chilli sauce
  • salt to taste
  • pepper to taste

How to Make Thousand Island Dressing

  • Mix the salt, pepper, lemon juice, sauces, mustard, sugar and oil. Mix well till light.
  • Add onions, capsicum, spring onion, olives, thick cream and mix again.
  • Chill well (1-2 hours) before serving.
  • Use as needed.
